INGREDIENTS

 2 lbs Spinach, finely chopped
 8 oz Cream cheese
 1 lb Feta cheese
 ½ cup Romano cheese
 4 Eggs
 1 Bunch green onion, chopped fine
 3 tbsp Olive oil
 2 ¼ tbsp OPA! Salad Blend
 ½ lb Filo pastry dough
 1 cup Butter, melted

DIRECTIONS

Preheat oven to 375°.

Wash spinach and chop very fine.

Combine cheeses, olive oil, spinach, OPA! Salad Blend, eggs, and green onion.

Cut filo dough into 3" strips. Place 2 strips on top of one another and brush with butter.

Place a teaspoon of the mixture on the end of the strip and fold as instructed.

Once completely folded, brush with butter again and place on ungreased cookie sheet.

Bake in the oven for 20 minutes or until golden brown. Serve warm. OPA!
