I take great pride in my Big Mouth Burger, but I never 'perfected' it until I discovered OPA! Meat Blend. Since I added OPA! to my burger, I get more "what's your secret?" questions than ever before. This recipe will contain all my secrets. I truly hope you, your family and friends all enjoy this recipe.
Prep: Combine 5 pounds 80/20 hamburger meat with 1 pound sausage into a large mixing bowl. Add 5 dashes of Worcestershire sauce. Crack 1 egg. Add 10 dashes of Opa! Meat Blend.
Combine ingredients by hand - just enough to get them mixed. Then knead into a ball and let rest for at least 30 minutes before cooking.
Now start your coals and get your grill ready.
Then begin your saute. Slice your onions and mushrooms (if not already sliced). Meal butter in a sauce pan and add your onions and mushrooms.
While they are turning into gooey greatness. Go check your coals and clean your grate. Prepare your grill for direct heat around 300 to 350 degrees.
Now go back to your 6 pounds of meat. Use your hands to form them into patties. Here it's important to think about how many your are feeding as you decided how big to make each patty. But since this is my Big Mouth Burger recipe, let's try to make each patty approximately 3/4 pound. Then as it cooks down, it will be just right.
Now go grill them up and let everyone add their sides - right? Here are two more tricks to make each individuals burger GREAT:
1) If you setup your grill heat to be hottest in the middle, create 3 concentric circles from well done, to medium well to an outer layer of medium.
2) Ask each person how they want their burger and what cheese they prefer. Then place a bottom bun on the grill. Place their patty on top. Then add the saute'd mushrooms and onions. Then add the cheese - As the cheese melts, it will hold the mushrooms and onion against the patty. This trick keeps them from falling off with each bite.
Last tip: don't break your arm patting yourself on your back as you watch everyone enjoying your labor of love.
