OPA! Foods | The Mediterranean Diet

For the Chicken
 4 Skinless, boneless chicken breasts
 ½ cup Extra virgin olive oil
 ½ cup Freshly squeezed lemon juice
 2 tbsp Minced garlic
 2 tbsp OPA! Chicken & Seafood Blend
For the Salad
 2 English cucumbers
 1 cup Cherry tomatoes, halved
 ½ Red onion, thinly sliced
 ½ cup Pitted kalamata olives, halved
 8 oz Feta cheese, cubed
 Pita bread & tzatziki sauce, optional
For the Chicken

Butterfly each chicken breast but don’t cut all the way through! - thinner chicken = faster cook time and better for you!

Place the chicken in a plastic zip-top bag

Combine all remaining ingredients (oil through seasoning) in a mason jar and shake well

4

Pour half of the dressing over the chicken and let marinate in the refrigerator for at least 2 hours to overnight

Grill chicken on outdoor grill or stovetop grill until cooked through, or bake at 375 degrees for 15-20 minutes

For the Salad

Combine all veggies, except the feta, in a bowl with remaining dressing.

Empty into a plate, top with sliced chicken breast, cubes of feta, and pita bread and tzatziki, if desired
