Stuffed grape leaves- Rice only

Rinse grape leaves to remove brine. If necessary, place in a saucepan, cover with water and simmer for 10 minutes to tenderize the leaves. Cool. Then let stand in water while preparing the mixture.
In a mixing bowl, add the chopped onion, 1 lemon juice, OPA!, the cup of olive oil, and rice. Mix well.
Carefully separate the grape leaves and cut off the thick stems.
Place 1 tbsp of filling on the underside of each leaf, folding the lower edge to cover it, fold in the sides and roll up.
Place a layer of leaves in the bottom of a deep saucepan. On top of the leaves, arrange the rolled grape leaves within the saucepan.
After the mixture is gone, add the 2 tbsp of Olive Oil, juice of 1 lemon, and enough water to almost cover the rolls.
Cover the saucepan and cook 45 minutes or until rice is tender. OPA!
