Zucchini Gazpacho

 3 Zucchinis
 2 tbsp Butter
 ¼ cup Pine Nuts
 2 cups Water
 ¼ cup Fresh Parsley
 2 tbsp Extra Virgin Olive Oil
 1 Lemon
 1 tbsp OPA! Chicken & Seafood Blend

Cook chopped zucchinis in butter on stove until soft (about 15 minutes)

In a separate pan, toast pine nuts until light brown and fragrant

Add all ingredients to blender and blend until you reach desired consistency

Chill overnight for the best flavor

Serve topped with olive oil and pine nuts
