3 lbs Ground Sirloin
¾ cup Almond Flour
½ Purple Onion
1 Medium Red Bell Pepper, diced
1 Medium Yellow Bell Pepper, diced
3 tbsp OPA! Meat Blend
12 oz Feta cheese, crumbled
2 cans diced tomatoes, drained
1 cup Calamata olives, pitted and chopped
½ cup Balsamic Vinegar
2 tbsp OPA! Meat Blend
Place sirloin meat into a large mixing bowl, pressing the sides into the bowl.
Lightly mix eggs until the yolks break. Then pour into the large mixing bowl. Add the remaining loaf ingredients. Mix well.
Lightly grease a 13x9 baking pan. Form mixture into loaf and place inside of the pan.
In a medium saucepan, combine all topping ingredients together. Mix well.
Once the mixture is warmed, pour on top of loaf and bake at 375° for 1 hour.
