This healthy gazpacho delivers a day's worth of veggies and can be prepared in less than 15 minutes.

 2 lbs Tomatoes
 ½ Onion
 1 Bell Pepper (green, red, or yellow)
 1 Garlic Clove
 1 Cucumber
 1 tbsp Olive Oil
 1 ½ OPA! Meat Blend

Lightly grill or boil tomatoes, onion, garlic, peppers in olive oil until fragrant (5 to 10 minutes) — optional

Add all ingredients to blender. Blend to desired consistency.
