One-pot Olive Chicken $ Potatoes
Yields1 Serving
 2 lbs Boneless, Skinless Chicken Thighs
 1 ½ tbsp Olive Oil
 1 ½ cups Chicken Broth
 ¾ cup Green or Black Pitted Olives
 12 oz Baby Red or Fingerling Potatoes
 1 Sliced Lemon
 1 ½ tbsp OPA! Chicken & Seafood

Sprinkle chicken thighs with half of OPA! Chicken & Seafood Blend

Brown chicken in olive oil — approximately 5 minutes per side on medium-high heat — and push chicken to the side

Add chicken stock, halved potatoes, olives, sliced lemons and remaining spices. Bring to a boil

Cover, reduce heat to low, and simmer until potatoes are tender — about 30 minutes
