Be sure to prepare the dressing an hour in advance.
4 Vine Ripe Tomatoes, cut into wedges
1 Cucumber, peeled then sliced 3/4" thick
4 oz Low Fat or No Fat Feta Cheese
1 Red Onion, sliced thin
½ Cup Olive Oil
¼ Cup Red Wine Vinegar
2 tbsp OPA! Salad Blend
5 Kalamata Olives
Whisk together olive oil, red wine vinegar, and OPA! (Prepare the dressing an hour before serving.)
Combine remaining ingredients in a bowl or on a plate. Avoid tossing the ingredients. Drizzle dressing evenly on top. OPA!
