Baked Viennese Chicken
Yields1 Serving
 2 lbs Chicken breasts or tenders
 34 Whisked Eggs
 2 cups Flour
 2 cups Ground Ritz crackers or panko
 12 Lemons
 Capers
 2 tbsp OPA! Chicken & Seafood Blend

Heat oven to 450 degrees

Pound chicken until pieces are relatively even in thickness

Prepare chicken by dredging in flour, dipping in egg wash (shaking off excess), covering in ground crackers or panko

Place chicken in a greased baking dish and top with OPA! Chicken & Seafood Blend

Cook for 18 minutes or until cooked through

6

Serve with sliced lemon and capers
