Shelter Chicken
I have named this recipe after my favorite outreach ministry that our
church parish has supported over the last 3 years, the Austin Street
Shelter. We have served thousands of meals with OPA!
Seasoning™. It is a simple, yet wonderful recipe.

1 quartered chicken, including skin
Lemon juice
OPA! Seasoning™
Preheat oven at 375 degrees.
Place the quartered chicken in a baking pan.
Pour lemon juice over the chicken until the bottom of the pan is
covered.
Liberally sprinkle OPA! Seasoning™ over
the chicken.
Place in oven and cook for approximately 1 hour.

Deanna’s Chicken
This
recipe actually happened by accident. I ran out of lemon juice and needed
a substitute. I used balsamic vinegar. The results were unbelievable.

1 quartered chicken, including skin
Balsamic vinegar
OPA! Seasoning™
Preheat oven at 375 degrees.
Place the quartered chicken in a baking pan.
Pour balsamic vinegar over the chicken until the bottom of the pan
is covered.
Liberally sprinkle OPA! Seasoning™ over
the chicken.

Boo’s Orange Roughy

4 filets of orange roughy (a great substitute is
also tilapia)
Lemon juice
OPA! Seasoning™
Preheat oven at 375 degrees.
Place the filets in a baking pan.
Pour lemon juice over the filets until the bottom of the pan is
covered.
Liberally sprinkle OPA! Seasoning™ over the filets.
Place in oven and cook for approximately 1 hour.

Penne’s Snappy Crackers
|
4 cups Oyster Crackers
½ cup of margarine or butter
1 teaspoon
OPA! Chicken and Seafood Seasoning
Dash of Tabasco
Great, simple and quick! Super snack idea!
Preheat oven to 350 F
Melt the butter in 9” x 13” pan in oven.
Stir in
OPA! and Tabasco.
Add oyster crackers, shaking pan to coat crackers with butter mixture.
Bake at 350 for 10 minutes or until golden brown.
Cool.

Kevin's Awesome Eggs
Simply substitute OPA! for any seasoning within your egg recipes. Add a
tablespoon of crumbled feta to the mixture as well.
Great with scrambled eggs!
